Great wood finishes take time and multiple coats. Especially taking a light wood to a dark finish. Start with a sealer, like a thinned shellac. When you are going for something dark like walnut you can even add some artist oil paint to further tint your sealer (a pea-sized blob of burnt umber in a quart of 50/50 thinned shellac is a good start). Don’t be afraid of doing a couple coats of stain, especially if you wipe on thin and wipe off quickly. A top coat of varnish will further build that color up. I used to dread oil finishes but they build rich durable finishes that continue to gain color and richness over time, where it’s hard to break the plastic look of water based finishes. Your project is looking great. I bet these are going to sound amazing!
