You add the cable capacitance to the capacitance of the RIAA unit. So, if each has 200pf, your total net capacitance the cartridge sees will be 400 pf.
I didn't notice this until just now, but when I was in school when capacitors were in series you added the reciprocal of the capacitance. So in this case:
1/C
total = 1/200pf + 1/200pf = 1/100pf, so
C
total = 100pf
Putting capacitors in series reduces the total capacitance and increases the voltage rating.
