Are the blue Torii's self biasing? Also, do they have a bias switch for weight and warmth?

Yes, the original Blue Torii is self-biasing.  In fact to date every Decware amplifier is self biasing.  They do not have a bias switch like our SE84C, to adjust the dynamics of the input stage, the feature becomes less important with power so it was never added to the TORII amps.

MK II and MK III have bias switches. . .for the output stage. . . right?

Just so your not lonely here Rollin, I too have a blue TORII I (A) version with no pre amp section. I find this amp is tremendously fast and yet it has a triode smoothness that is really practically like  a triode amp. At its rated 15 wpc I have never had this amp clip on demanding material with the rare exception of recording that are sometimes overdone in the deep bass.
Really great amp and never to be produced again unless someone clones it (which I don't recommend). ;)
